Ingredients

1.5 kg (about 3.3 lbs) chicken drumsticks

1/4 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon apple cider vinegar

1 teaspoon chili flakes (optional, for heat)

1 teaspoon black pepper

1 teaspoon salt

1 tablespoon cornflour (cornstarch)

1 red onion, cut into wedges

2 cups assorted vegetables (e.g., bell peppers, carrots, zucchini), chopped

1/4 cup sesame seeds

Fresh parsley or coriander, for garnish

Instructions

Preheat the Oven: Preheat your oven to 200°C (400°F).

Prepare the Marinade: In a large mixing bowl, combine honey, soy sauce, minced garlic, ginger, sesame oil, apple cider vinegar, chili flakes, black pepper, and salt. Whisk until well blended.

Marinade the Drumsticks: Add the chicken drumsticks to the bowl and toss them thoroughly in the marinade. For best flavor, let them marinate in the refrigerator for at least 1 hour (or overnight if possible).

Prep the Tray: Line a large baking tray with parchment paper for easy cleanup. Sprinkle the cornflour evenly over the base of the tray to help catch the juices.

Arrange the Ingredients: Place the marinated drumsticks on the baking tray, followed by the red onion wedges and assorted chopped vegetables around them. Drizzle any remaining marinade over the top.

Bake: Place the tray in the preheated oven and bake for 35-40 minutes, or until the drumsticks are cooked through and golden brown, basting midway with the juices (internal temperature should reach 75°C or 165°F).

Add the Finishing Touches: During the last 5 minutes of baking, sprinkle sesame seeds over the drumsticks and vegetables to toast them lightly.

Serve: Once fully cooked, remove the traybake from the oven. Garnish with fresh parsley or coriander before serving. This dish pairs beautifully with steamed rice or crusty bread to soak up the sticky sauce!
