Sticky Maple Dijon Chicken Drumsticks

8 chicken drumsticks

1/2 cup pure maple syrup

1/4 cup Dijon mustard

2 tablespoons soy sauce (low sodium)

2 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1 tablespoon fresh rosemary, finely chopped (optional for garnish)

Instructions
 

Prep the Chicken: Rinse the chicken drumsticks under cold water and pat them dry with paper towels. Place them in a large mixing bowl.

    Make the Marinade: In a separate bowl, whisk together the maple syrup, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, smoked paprika, black pepper, and salt until well combined.

      Marinate the Chicken: Pour the marinade over the chicken drumsticks, ensuring each piece is evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour (up to overnight for best flavor).

        Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top (this helps to crisp the skin).

          Arrange the Drumsticks: Remove the drumsticks from the marinade, allowing excess marinade to drip off. Place them on the wire rack, spacing them evenly apart. Reserve the leftover marinade.

            Bake the Chicken: Bake the drumsticks in the preheated oven for about 25-30 minutes, or until they reach an internal temperature of 165°F (75°C) and the skin is golden brown.

              Glaze the Chicken: While the chicken is baking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce the heat and let it simmer for about 5-7 minutes or until it thickens slightly.

                Baste and Finish Baking: About 5 minutes before the chicken is done, brush the thickened glaze over the drumsticks. Return to the oven and cook for an additional 5 minutes to caramelize the glaze.

                  Serve: Once cooked, remove the drumsticks from the oven, and let them rest for a few minutes. Optionally, sprinkle with fresh rosemary before serving.
