2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk, at room temperature

3 large eggs

1 tbsp vanilla extract

1 tbsp baking powder

½ tsp baking soda

½ tsp salt

1 ½ cups fresh strawberries, chopped and mixed with 1 tbsp sugar

For the Strawberry Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

½ cup fresh strawberries, pureed

2 tbsp heavy cream

1 tsp vanilla extract

Pinch of salt

For Garnish:

Fresh strawberries, halved

Whipped cream (optional)

Mint leaves (optional)

Instructions
 

Prepare the Cake Batter:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

          - In another bowl, whisk together the flour, baking powder, baking soda, and salt.

            - Gradually add the dry mixture to the butter mixture, alternating with the buttermilk. Begin and end with the flour mixture.

              - Gently fold in the chopped strawberries that have been mixed with sugar.

                Bake the Cakes:

                  - Divide the batter evenly between the two prepared pans. Smooth the tops with a spatula.

                    - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                      - Once baked, let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

                        Make the Strawberry Frosting:

                          - In a large bowl, beat the softened butter until creamy.

                            - Gradually add the powdered sugar, mixing on low speed until combined.
