Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk

3 large eggs

1 tablespoon baking powder

1 teaspoon vanilla extract

½ teaspoon salt

1 cup fresh strawberries, pureed

For the Strawberry Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

1 tablespoon vanilla extract

2-3 tablespoons heavy cream

½ cup fresh strawberries, finely chopped

For Garnish:

Fresh strawberries, halved

Mint leaves (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, ensuring an even layer for easy removal.

Prepare the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This typically takes about 3-5 minutes.

Combine Wet Ingredients: Add the eggs one at a time, mixing well after each addition. Then, stir in the milk, vanilla extract, and strawberry puree until fully combined.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix, as this can make the cake dense.

Bake the Cakes: Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.

Make the Strawberry Frosting: While the cakes are cooling, prepare the frosting. In a bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on a low speed until incorporated. Then add the vanilla extract and 2 tablespoons of heavy cream, beating until light and fluffy. If the frosting is too thick, add more cream as needed. Finally, gently fold in the finely chopped strawberries.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of strawberry frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.

Garnish and Serve: Arrange halved fresh strawberries on top of the cake for garnish, and add mint leaves if desired. Slice and serve this delightful Strawberry Bliss Cake to enjoy with friends and family!
