1 whole turkey (12-14 pounds), thawed

1 cup fresh strawberries, hulled and halved

1 cup strawberry jam

1/4 cup balsamic vinegar

1/4 cup honey

1 tablespoon olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon salt

1 teaspoon black pepper

Zest of 1 lemon

Fresh thyme sprigs for garnish

Prepare the Turkey: Preheat your oven to 325°F (165°C). Remove the giblets and neck from the turkey cavity, then pat the turkey dry with paper towels.

    Make the Strawberry Glaze: In a medium saucepan over medium heat, combine the fresh strawberries, strawberry jam, balsamic vinegar, honey, olive oil, garlic powder, onion powder, salt, and black pepper. Stir well and bring to a gentle simmer. Cook for about 10 minutes, until the strawberries break down and the mixture thickens slightly. Remove from heat and let cool.

      Season the Turkey: Rub the turkey all over with lemon zest, adding an extra pinch of salt and pepper to season inside the cavity.
