1 cup (2 sticks) unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

Pinch of salt

1 cup fresh strawberries, diced

1/4 cup powdered sugar (for dusting)

1 cup whipped cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. This should take about 3-4 minutes using a hand mixer or stand mixer.

      Mix in the Egg and Vanilla: Add the egg and vanilla extract to the butter-sugar mixture, mixing until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.

          Fold in Strawberries: Gently fold in the diced strawberries, being careful not to smash them too much. The dough will be soft and somewhat sticky.

            Scoop the Cookies: Using a cookie scoop or tablespoon, drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake the Cookies: Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden. The centers may look slightly undercooked; that’s okay! They will firm up as they cool.

                Cool the Cookies: Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.
