For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

¼ teaspoon salt

For the cheesecake filling:

24 oz cream cheese, softened

1 cup sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

¼ cup all-purpose flour

For the strawberry swirl:

1 cup fresh strawberries, hulled and sliced

¼ cup sugar

1 tablespoon lemon juice

Instructions
 

Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.

    Prepare the crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, sugar, and salt until combined. Press the mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes, then remove and let cool slightly.

      Make the strawberry swirl: In a small saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook until the strawberries are soft and the sugar has dissolved, about 5-7 minutes. Remove from heat and let cool, then mash slightly with a fork to create a chunky sauce.

        Prepare cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the sugar and vanilla, mixing well. Add the eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

          Add sour cream and flour: Gently fold in the sour cream and all-purpose flour until just incorporated.

            Create the swirl: Pour half of the cheesecake filling into the crust, followed by half of the strawberry sauce. Use a knife or skewer to swirl gently. Add the remaining cheesecake filling and top with the rest of the strawberry sauce, swirling again to create a marbled effect.

              Bake the cheesecake: Place the springform pan on a baking sheet and bake in the preheated oven for about 55-65 minutes or until the edges are set and the center is still slightly jiggly.

                Cool and chill: Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours or preferably overnight before removing the springform pan.

                  Serve: Once chilled, slice and serve your luscious Strawberry Swirl Cheesecake, garnished with fresh strawberries if desired.
