Ingredients

2 ripe avocados

1 can (5 oz) of tuna in water, drained

1/4 cup plain Greek yogurt

1 tbsp mayonnaise (optional)

1 tbsp Dijon mustard

1/4 cup celery, finely diced

1/4 cup red onion, finely chopped

2 tbsp fresh cilantro, chopped (or parsley)

Juice of 1 lime

Salt and pepper to taste

Optional toppings: cherry tomatoes, sliced radishes, or a sprinkle of paprika

Instructions

Prepare the Avocados: Slice the avocados in half lengthwise and remove the pit. Scoop out a small portion of the flesh to create a larger cavity for stuffing, and dice the removed avocado flesh. Set aside.

Make the Tuna Salad: In a mixing bowl, combine the drained tuna, Greek yogurt, (mayonnaise if using), Dijon mustard, diced celery, chopped red onion, cilantro, lime juice, salt, and pepper. Gently fold in the diced avocado flesh until everything is well mixed. Adjust seasoning as necessary.

Stuff the Avocados: Carefully spoon the tuna salad mixture into the avocado halves, packing them generously.

Garnish and Serve: Top the stuffed avocados with your choice of optional ingredients like halved cherry tomatoes, thinly sliced radishes, or a light sprinkle of paprika for extra flavor and presentation.

Enjoy!: Serve immediately as a refreshing and healthy lunch or snack.
