Stuffed Chicken Breast

4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

½ cup sun-dried tomatoes, finely chopped

1 cup cream cheese, softened

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional for a kick)

Fresh basil, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Stuffing Mix: In a medium bowl, combine the cream cheese, chopped spinach, sun-dried tomatoes, mozzarella cheese, Parmesan cheese, minced garlic, Italian seasoning, and red pepper flakes (if using). Mix until well combined and season with salt and pepper to taste.

      Prepare the Chicken: Place the chicken breasts on a cutting board. Using a sharp knife, carefully butterfly each chicken breast by slicing horizontally, but not all the way through, creating a pocket for the stuffing.

        Stuff the Chicken: Generously fill each chicken breast pocket with the cheese and spinach mixture, ensuring it's evenly distributed. Secure the opening with toothpicks or kitchen twine to keep the stuffing from spilling out during cooking.

          Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Add the stuffed chicken breasts to the skillet and sear for 3-4 minutes on each side until golden brown.

            Bake the Chicken: Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
