Ingredients

1 pound ground beef (or turkey)

1 cup cooked rice (white or brown)

1 cup bell peppers, chopped (red, green, and yellow for color)

1 cup diced tomatoes (canned or fresh)

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1 cup marinara sauce

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, cooked rice, chopped bell peppers, diced tomatoes, onion, garlic, Italian seasoning, paprika, salt, and pepper. Mix until well combined.

Form Meatballs: Using your hands, shape the mixture into 1-inch meatballs and place them in a lightly greased 9x13-inch baking dish.

Add Marinara Sauce: Pour the marinara sauce evenly over the meatballs, ensuring they are well coated.

Top with Cheese: Sprinkle shredded mozzarella cheese generously on top of the meatballs and sauce.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the meatballs are cooked through and the cheese is bubbly and golden.

Garnish and Serve: Remove the casserole from the oven and let it sit for a few minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Serve hot, with a side salad or garlic bread to complement the dish!
