1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

3 large bell peppers (red, yellow, green), diced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups beef or vegetable broth

1 cup long-grain white rice

1 can (15 oz) kidney beans, rinsed and drained

2 tsp Italian seasoning

1 tsp smoked paprika

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley or cilantro, for garnish

Grated cheese (optional, for serving)

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Meat: Add the ground beef (or turkey) to the pot. Cook, breaking it apart with a spoon, until it’s no longer pink (about 5-7 minutes). Drain excess fat if necessary.

      Add Vegetables: Stir in the diced bell peppers and continue to cook for another 5 minutes, letting them soften.

        Combine Ingredients: Add the diced tomatoes (with juices), broth, rice, kidney beans, Italian seasoning, smoked paprika, salt, and pepper to the pot. Bring the mixture to a boil.

          Simmer: Reduce the heat to low, cover the pot, and let the soup simmer for about 25-30 minutes or until the rice is cooked and tender.

            Adjust Seasonings: Taste the soup and adjust seasonings as needed, adding more salt, pepper, or spices to your preference.

              Serve: Ladle the soup into bowls. Garnish with fresh parsley or cilantro and top with grated cheese if desired. Enjoy warm!
