Summer Corn and Tomato Salad

Ingredients
  

4 ears of fresh corn, husked

2 cups cherry tomatoes, halved

1 small red onion, finely diced

1 avocado, diced

1/4 cup fresh basil leaves, torn

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon honey

Salt and freshly ground black pepper, to taste

Prepare the Corn: Bring a large pot of water to a boil. Add the husked corn and cook for about 5-7 minutes, until tender. Remove from the pot and let it cool. Once cooled, use a sharp knife to cut the kernels off the cob and place them in a large mixing bowl.

    Mix the Ingredients: To the bowl with corn, add the halved cherry tomatoes, diced red onion, diced avocado, and torn basil leaves. If using feta cheese, add it now to the mixture.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, honey, salt, and pepper until well combined.

        Combine Everything: Pour the dressing over the corn and vegetable mixture. Gently toss everything together until well coated.

          Chill and Serve: Let the salad sit for at least 15 minutes to allow the flavors to meld. Serve chilled or at room temperature, garnished with extra basil if desired.
