Ingredients
  

1 lb (450g) shrimp, peeled and deveined

2 cups jasmine rice

1 medium fresh pineapple, diced

1 red bell pepper, diced

1 cup sugar snap peas, trimmed

3 green onions, sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

2 tablespoons sesame oil

2 tablespoons olive oil

1 tablespoon honey

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions
 

Cook the Rice:

    - Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

      Prepare the Shrimp Marinade:

        - In a medium bowl, whisk together the soy sauce, sesame oil, honey, lime juice, minced garlic, and minced ginger. Add the shrimp and toss to coat evenly. Let marinate for 15-20 minutes.

          Sauté the Vegetables:

            - In a large skillet, heat olive oil over medium-high heat. Add the diced red bell pepper and sugar snap peas, and stir-fry for about 5 minutes until they begin to soften and brighten in color. Season with salt and pepper to taste. Remove from the skillet and set aside.

              Cook the Shrimp:

                - In the same skillet, add the marinated shrimp (discard any remaining marinade) and cook for 2-3 minutes on each side until they turn pink and opaque. Be careful not to overcook. Remove from heat.

                  Combine and Assemble:

                    - In a large bowl, combine the cooked rice, sautéed vegetables, diced pineapple, and cooked shrimp. Gently toss to combine all the ingredients evenly.

                      Serve:

                        - Spoon the shrimp and pineapple rice mixture into serving bowls. Garnish with sliced green onions and fresh cilantro if desired. Serve with lime wedges on the side for an extra burst of flavor.
