2 lbs Yukon Gold potatoes, peeled and cut into chunks

1 cup heavy cream

½ cup unsalted butter, plus extra for garnish

½ cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

Salt, to taste

Freshly cracked black pepper, to taste

Chives or parsley, for garnish

Prep the Potatoes: Place the peeled and cut Yukon Gold potatoes in a large pot. Cover them with cold water and add a generous pinch of salt. Bring to a boil over medium-high heat.

    Cook the Potatoes: Once boiling, reduce the heat to a simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

      Drain and Steam: Drain the cooked potatoes in a colander, then return them to the pot. Cover the pot for a couple of minutes to let the residual heat steam the potatoes, which helps remove excess moisture.
