Swedish Meatball Pasta Bake

12 oz (340g) pasta (penne or rigatoni works best)

1 lb (450g) frozen Swedish meatballs (or homemade if preferred)

1 cup (240ml) beef broth

1 cup (240ml) heavy cream

1 cup (240g) sour cream

1 cup (100g) shredded mozzarella cheese

1/2 cup (50g) grated Parmesan cheese

2 tbsp olive oil

1 onion, finely chopped

3 cloves garlic, minced

1 tsp dried thyme

1 tsp dried oregano

1/4 tsp nutmeg

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.

      Prepare the Meatballs: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add Meatballs: Toss the frozen meatballs into the skillet with the onions and garlic. Brown them on all sides, which should take about 5-7 minutes.

          Make the Sauce: Stir in the beef broth, heavy cream, sour cream, dried thyme, oregano, nutmeg, salt, and pepper into the skillet. Bring to a simmer, allowing the sauce to thicken slightly.

            Combine Ingredients: In a large baking dish, combine the cooked pasta and meatball mixture. Stir until everything is evenly coated with the sauce.

              Add Cheese: Sprinkle the mozzarella cheese and half of the Parmesan cheese on top of the pasta and meatball mixture.

                Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After that, remove the foil and sprinkle the remaining Parmesan cheese on top. Bake for an additional 10-15 minutes until the cheese is bubbly and golden.

                  Garnish and Serve: Once out of the oven, let the dish cool for a few minutes. Garnish with chopped parsley before serving.
