1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 cup milk (or non-dairy alternative)

2 large eggs

2 tablespoons melted butter (or coconut oil for a dairy-free option)

1 teaspoon vanilla extract

Optional: Sliced bananas and maple syrup for serving

Prep the Bananas: In a mixing bowl, mash the ripe bananas until smooth, leaving some small chunks for added texture.

    Combine Dry Ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

      Mix Wet Ingredients: In another bowl, combine the milk, eggs, melted butter, vanilla extract, and the mashed bananas. Stir until well mixed.

        Combine Mixtures: Gradually pour the dry ingredients into the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine!

          Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.

            Cook the Pancakes: Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes on the other side until golden brown.
