For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

3 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp honey

1 tbsp garlic, minced

1 tsp ginger, grated

1 tbsp sesame oil

Salt and pepper to taste

For the Sweet and Sour Sauce:

1/2 cup ketchup

1/3 cup apple cider vinegar

1/4 cup brown sugar

2 tbsp soy sauce

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Veggies for Skewers:

1 bell pepper (red, yellow, or green), cut into 1-inch pieces

1 red onion, cut into wedges

1 cup pineapple chunks (fresh or canned)

Garnish:

Sesame seeds

Green onions, chopped

Marinate the Chicken (10 minutes): In a mixing bowl, combine soy sauce, rice vinegar, honey, garlic, ginger, sesame oil, salt, and pepper. Add the chicken cubes, coating them well in the marinade. Let the chicken marinate for about 10 minutes while you prep the skewers.

    Preheat the Grill or Grill Pan: Heat your grill or grill pan over medium-high heat.

      Prepare the Skewers (5 minutes): While the chicken marinates, soak wooden skewers in water for 10 minutes (to prevent burning) if using. Thread the marinated chicken, bell pepper pieces, red onion wedges, and pineapple chunks onto the skewers, alternating the ingredients.

        Make the Sweet and Sour Sauce (5 minutes): In a small saucepan, combine ketchup, apple cider vinegar, brown sugar, and soy sauce. Heat over medium heat, stirring until it's well combined. Once it begins to simmer, stir in the cornstarch slurry and cook for an additional 1-2 minutes until the sauce thickens. Remove from heat and set aside.

          Grill the Skewers (10 minutes): Place the skewers on the hot grill and cook for about 3-4 minutes on each side, basting with sweet and sour sauce during the last few minutes of cooking. Ensure the chicken is fully cooked (internal temperature should reach 165°F / 74°C).

            Serve and Enjoy: Remove the skewers from the grill and sprinkle with sesame seeds and chopped green onions. Serve the remaining sweet and sour sauce on the side for dipping.
