Ingredients

2 ripe bananas, mashed

2 cups rolled oats

1 cup almond milk (or any milk of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans, optional)

1/2 cup chocolate chips or dried fruits (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, almond milk, honey (or maple syrup), and vanilla extract. Mix until smooth and well incorporated.

Combine Dry Ingredients: In another bowl, whisk together the rolled oats, baking powder, cinnamon, and salt until evenly mixed.

Combine Mixtures: Pour the dry ingredients into the wet ingredients and stir until just combined. If you’re using nuts or chocolate chips, fold them into the mixture gently.

Fill Muffin Tins: Spoon the oatmeal mixture evenly into the prepared muffin cups, filling each about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for about 20-25 minutes, or until the tops are firm and slightly golden.

Cool and Serve: Once baked, remove from the oven and let the oatmeal cups cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
