Ingredients

2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup chopped walnuts (or your choice of nuts)

1/4 cup dried cranberries or raisins

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

Optional: 1/4 cup dark chocolate chips for a sweeter twist

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal later.

Mix Wet Ingredients: In a large bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until all ingredients are well blended.

Combine Dry Ingredients: In another bowl, mix the rolled oats, cinnamon, baking powder, and salt.

Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. Fold in the walnuts, dried cranberries, and dark chocolate chips if using.

Pour into Baking Dish: Spread the mixture evenly into the prepared baking dish, smoothing the top with a spatula.

Bake: Bake in the preheated oven for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.

Cool and Cut: Allow the bars to cool in the pan for 10 minutes, then lift them out using the parchment paper overhang. Place them on a wire rack to cool completely before cutting into squares or bars.

Serve: Enjoy these delicious and nutritious bars as a quick breakfast or snack throughout the week. Store leftovers in an airtight container for up to 5 days.
