2 ripe bananas, mashed

1 1/2 cups rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/2 cup chopped nuts (e.g., walnuts or almonds, optional)

1/4 cup dried fruit (e.g., cranberries or raisins, optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    In a large mixing bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Mix well until smooth and creamy.

      In a separate bowl, mix together the rolled oats, cinnamon, and salt. Gradually incorporate this dry mixture into the wet mixture, stirring until everything is well combined.

        Fold in the add-ins, if using: chocolate chips, chopped nuts, and dried fruit. Ensure that they are evenly distributed throughout the mixture.

          Spread the mixture evenly into the prepared baking pan, pressing it down firmly with a spatula or your hands to ensure it holds together.

            Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and the center is firm to the touch.

              Remove from the oven and allow to cool in the pan for about 10 minutes. Use the parchment overhang to lift the bars out of the pan and onto a wire rack to cool completely.

                Once cooled, cut into squares or bars as desired. Store in an airtight container at room temperature for up to one week or in the refrigerator for longer freshness.
