1 cup rolled oats

1 cup buttermilk (or milk with 1 tsp vinegar)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/4 cup vegetable oil (or melted coconut oil)

1 large egg

1 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups fresh or frozen blueberries (if using frozen, do not thaw)

Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with a bit of oil.

    Soak Oats: In a medium bowl, combine the rolled oats and buttermilk. Let them soak for about 10-15 minutes while you prepare the other ingredients. This softens the oats and enhances the texture of the muffins.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the brown sugar, granulated sugar, vegetable oil, egg, and vanilla extract until well combined.

        Combine Mixtures: Once the oats have soaked, add the oat mixture to the wet ingredients and stir until combined.

          Sift Dry Ingredients: In another bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. This aerates the flour and helps prevent lumps.

            Combine All Ingredients: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; a few lumps are okay.

              Add Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

                Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full to allow for rising.

                  Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out mostly clean with a few moist crumbs.

                    Cool Down: Once baked, remove from the oven and let the muffins rest in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
