4 medium-sized Granny Smith apples, peeled and diced

1/4 cup granulated sugar

1 tsp ground cinnamon

1 tbsp lemon juice

1 tbsp cornstarch

For the Caramel Sauce:

1 cup brown sugar

1/2 cup unsalted butter

1/4 cup heavy cream

1 tsp vanilla extract

Pinch of salt

For the Crumble Base and Topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup packed brown sugar

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp salt

1/2 cup unsalted butter, melted

1/2 tsp vanilla extract

Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions
 

Prepare the Apple Filling:

    - In a large bowl, toss the diced apples with granulated sugar, cinnamon, lemon juice, and cornstarch. Allow it to sit for about 15 minutes while you prepare the crumble.

      Make the Caramel Sauce:

        - In a medium saucepan over medium heat, combine the brown sugar, butter, heavy cream, vanilla extract, and a pinch of salt. Stir constantly until the mixture comes to a simmer. Let it bubble for 4-5 minutes until slightly thickened. Remove from heat and set aside.

          Prepare the Crumble Base:

            - Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan or line it with parchment paper.

              - In a mixing bowl, combine the flour, rolled oats, brown sugar, granulated sugar, baking powder, and salt. Stir well.

                - Add melted butter and vanilla extract. Mix until crumbly and well combined. Reserve about 1 cup of this mixture for the topping.

                  Assemble the Bars:

                    - Press the remaining crumble mixture firmly into the bottom of the prepared baking pan to form an even layer.
