Sweet Chili Chicken Lettuce Wraps

Ingredients
  

1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, finely diced

1 carrot, grated

1/4 cup soy sauce (low sodium)

1/4 cup sweet chili sauce

1 tablespoon rice vinegar

1 tablespoon ginger, grated

1 teaspoon sesame oil

Salt and pepper to taste

1 head of romaine or iceberg lettuce, leaves separated

Chopped green onions and cilantro for garnish

Optional toppings: chopped peanuts, sesame seeds, lime wedges

Instructions
 

Sauté Aromatics:

    Heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing for about 2 minutes until fragrant and the onion becomes translucent.

      Cook the Chicken:
