Sweet Chili Glazed Meatballs – Perfect for Meal Prep!

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (preferably panko for extra texture)

1/4 cup grated parmesan cheese

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 large egg

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (adjust to your spice preference)

For the Sweet Chili Glaze:

1/3 cup sweet chili sauce

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tsp sesame oil

1 tsp cornstarch mixed with 2 tbsp water (to thicken)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

    Make the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, parmesan cheese, green onions, minced garlic, egg, salt, black pepper, and red pepper flakes. Mix until everything is well combined, but try to avoid overmixing.

      Form the Meatballs: Using your hands, shape the mixture into small meatballs, roughly 1-1.5 inches in diameter. Place them onto the prepared baking sheet, ensuring they are spaced apart.

        Bake the Meatballs: Bake in the preheated oven for about 15-20 minutes, or until they are cooked through and lightly browned.

          Prepare the Sweet Chili Glaze: In a small saucepan over medium heat, combine the sweet chili sauce, soy sauce, rice vinegar, honey, and sesame oil. Stir to combine and bring to a simmer. Once simmering, add the cornstarch-water mixture and stir until the glaze thickens, which should take about 1-2 minutes.

            Glaze the Meatballs: Once the meatballs are done baking, drizzle or brush the sweet chili glaze over them, ensuring each meatball is well coated. For extra flavor, return them to the oven for an additional 5 minutes.

              Serve or Store: Serve the meatballs immediately with extra glaze on the side, or let them cool completely if you’re meal prepping. Store them in airtight containers in the refrigerator for up to 5 days, or freeze for up to a month.
