Sweet Chili Tofu Stir-Fry

14 oz (400g) firm tofu, drained and pressed

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup snap peas, trimmed

1 carrot, thinly sliced

3 green onions, chopped

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Cooked jasmine or brown rice for serving

Sesame seeds and fresh cilantro for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Toss the tofu cubes in cornstarch until evenly coated. This will ensure a nice crispy texture when cooked.

    Heat the Oil: In a large wok or non-stick skillet, heat the vegetable oil over medium-high heat. When the oil is shimmering, add the tofu in a single layer. Cook for about 5-7 minutes, turning occasionally until golden brown and crispy on all sides. Remove the tofu from the pan and set aside.

      Sauté the Veggies: In the same pan, add the sliced red and yellow bell peppers, snap peas, and carrot. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.

        Add Aromatics: Add the minced garlic and grated ginger to the pan. Stir continuously for about 30 seconds, until fragrant.

          Combine with Tofu: Return the crispy tofu to the pan with the vegetables. Pour in the sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Toss everything together gently but thoroughly, ensuring the tofu and vegetables are well-coated in the sauce. Cook for an additional 2-3 minutes until everything is heated through.

            Serve: Remove from heat and garnish with chopped green onions, sesame seeds, and fresh cilantro. Serve the sweet chili tofu stir-fry over a bed of jasmine or brown rice.
