Ingredients

3 ripe bananas, mashed

1/3 cup unsalted butter, melted

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

Combine Wet Ingredients: In a large mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter. Then, add the brown sugar and mix until well combined.

Add Egg and Vanilla: Beat in the egg and vanilla extract until the mixture is smooth and creamy.

Mix Dry Ingredients: In a separate bowl, combine the baking soda and salt with the all-purpose flour. Whisk together until evenly mixed.

Combine Ingredients: Gradually incorporate the dry mixture into the wet mixture, folding them together gently until just combined. Be cautious not to overmix, as this can result in dense muffins.

Fold in Chocolate and Nuts: Gently fold in the chocolate chips and chopped walnuts (if using) until they are evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the lined muffin cups, filling each about 2/3 full to allow room for rising.

Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean with few crumbs attached.

Cool & Enjoy: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy these heavenly muffins warm or at room temperature!
