Ingredients

1 cup fresh corn kernels (or canned if fresh unavailable)

1 medium zucchini, grated (excess moisture squeezed out)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese

2 tablespoons fresh chives, chopped

1 teaspoon baking powder

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for a little heat)

2 tablespoons olive oil (for frying)

Sour cream or yogurt (for serving)

Instructions

Prepare Ingredients: In a medium mixing bowl, combine the grated zucchini and corn kernels. Squeeze out any excess moisture from the zucchini using a clean kitchen towel or cheesecloth to prevent soggy fritters.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, cornmeal, baking powder, garlic powder, salt, black pepper, and cayenne pepper if using.

Combine Mixtures: Add the dry mixture to the zucchini and corn mixture. Stir in the eggs and grated Parmesan until well incorporated. Finally, fold in the chopped chives.

Heat Oil: In a large non-stick skillet, heat the olive oil over medium heat until shimmering.

Form Fritters: Using a 1/4 cup measuring spoon, scoop the batter and carefully place it into the hot skillet, flattening them slightly to form fritters. Cook in batches, ensuring not to overcrowd the pan.

Cook Fritters: Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy. Drain on paper towels.

Serve: Serve warm, topped with a dollop of sour cream or yogurt, and a sprinkle of extra chives if desired. Enjoy!
