Sweet Corn & Avocado Salad

Ingredients
  

2 cups fresh sweet corn (cut from about 3-4 ears of corn)

1 large ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon honey (optional)

Salt and pepper to taste

1 jalapeño, finely diced (optional for heat)

Instructions
 

Begin by preparing the sweet corn. If using fresh corn, remove the husk and silk from the ears. Bring a large pot of water to boil, then add the corn. Cook for 3-5 minutes until just tender. Drain and let cool. If using canned or frozen corn, simply thaw or drain as necessary.

    In a large mixing bowl, combine the cooled sweet corn, diced avocado, halved cherry tomatoes, finely diced red onion, and chopped cilantro.

      In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper.

        Pour the dressing over the salad and gently toss until everything is well coated. Be careful not to mash the avocado.

          If desired, add the diced jalapeño for a spicy kick and mix gently again.

            Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.

              Serve immediately, or let it chill in the refrigerator for 15-20 minutes to allow the flavors to meld together.
