2 cups fresh sweet corn kernels (about 4 ears of corn)

1 medium red bell pepper, diced

1 medium cucumber, diced

1/2 red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon lime juice

1 teaspoon honey

Salt and pepper, to taste

1/2 teaspoon chili powder (optional, for a kick)

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for 3-5 minutes until tender. Remove from heat, drain, and let cool. Once cool enough to handle, carefully cut the kernels off the cob. Set aside.

    Chop the Veggies: While the corn is cooling, dice the red bell pepper, cucumber, and red onion. Halve the cherry tomatoes and chop the fresh cilantro. If using feta cheese, crumble it into small pieces.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, lime juice, honey, salt, pepper, and chili powder (if using) until well combined.

        Combine Ingredients: In a large mixing bowl, combine the sweet corn, diced bell pepper, cucumber, red onion, cherry tomatoes, and cilantro. Pour the dressing over the salad and toss gently until everything is evenly coated.

          Add Feta: If you’re using feta cheese, sprinkle it on top of the salad and give it one last gentle toss.

            Chill and Serve: For the best flavor, refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld beautifully. Serve cold and enjoy!
