1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1/4 cup unsalted butter, melted

2 large eggs

1 cup fresh or frozen sweet corn kernels

1/2 teaspoon vanilla extract

Optional: 1/2 cup shredded cheddar cheese for an extra savory twist

Preheat your oven to 400°F (200°C) and grease a muffin tin or line it with paper liners.

    In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Whisk together until well combined.

      In another bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients. Stir gently until just combined—be careful not to overmix! The batter should be slightly lumpy but cohesive.

          Gently fold in the sweet corn kernels (and cheese if using) until evenly distributed.

            Use a scoop or spoon to fill each muffin cup about two-thirds full with the batter.
