Sweet Hawaiian Crockpot Chicken

2 pounds boneless, skinless chicken thighs

1 cup pineapple juice

1 cup soy sauce

1/2 cup brown sugar, packed

3 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for a kick)

1 can (15 oz) diced pineapple, drained

1 bell pepper (red or green), sliced

1 onion, sliced

Cooked jasmine or sticky rice, for serving

Sliced green onions and sesame seeds, for garnish

Instructions
 

Prepare Chicken: Place the chicken thighs in the bottom of your crockpot. Make sure they are spread evenly.

    Mix Sauce: In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, ginger, black pepper, and red pepper flakes until the sugar is dissolved.

      Combine Ingredients: Pour the sauce mixture over the chicken in the crockpot. Add the drained diced pineapple, sliced bell pepper, and onion on top.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
