2 lbs boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned, drained)

1 cup bell pepper (red and yellow), sliced

1/2 cup red onion, sliced

1/2 cup soy sauce (low sodium preferred)

1/4 cup brown sugar

1/4 cup honey

2 cloves garlic, minced

1 tsp ground ginger

1 tsp sesame oil

1/2 tsp black pepper

1/2 tsp salt

Sesame seeds and green onions for garnish (optional)

Cooked white or brown rice for serving

Instructions
 

In a large bowl, combine soy sauce, brown sugar, honey, minced garlic, ground ginger, sesame oil, black pepper, and salt. Stir until the sugar is dissolved.

    Place the chicken breasts into the crockpot and pour the sauce mixture over them, ensuring the chicken is well coated.

      Add the sliced bell peppers, red onion, and pineapple chunks on top of the chicken in the crockpot.

        Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is tender and fully cooked.

          Once done, shred the chicken directly in the crockpot using two forks, mixing it with the sauce and vegetables.

            Serve hot over a bed of cooked white or brown rice. Sprinkle with sesame seeds and chopped green onions if desired.
