2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1 cup quinoa, rinsed

2 cups vegetable broth (or water)

1 can black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 avocado, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely diced

1 lime, juiced

Fresh cilantro, for garnish

½ cup queso fresco or feta cheese (optional)

Hot sauce, to taste (optional)

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). On a baking sheet, toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Spread them out in a single layer. Roast in the oven for about 25-30 minutes, or until tender and slightly caramelized, stirring halfway through for even cooking.

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid has been absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
