Sweet Potato Hash with Spinach and Eggs

1 large sweet potato, peeled and diced into small cubes

2 tablespoons olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

2 cups fresh spinach, washed and chopped

4 large eggs

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

Fresh herbs (parsley or cilantro) for garnish, optional

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they start to soften and brown.

    Add Aromatics: Add the diced onion and bell pepper to the skillet with the sweet potatoes. Sauté for another 5 minutes until the onion is translucent.

      Incorporate Garlic and Spices: Stir in the minced garlic, smoked paprika, and ground cumin, cooking for an additional 1-2 minutes until fragrant.

        Add Spinach: Add the chopped spinach to the skillet and stir well, allowing it to wilt for about 2-3 minutes. Season the mixture with salt and pepper to taste.

          Cook the Eggs: Using the back of a spoon or a spatula, create 4 small wells in the hash mixture. Crack an egg into each well. Cover the skillet with a lid and cook for 5-7 minutes, or until the egg whites are set but the yolks remain runny. For firmer yolks, cook an additional 2-3 minutes.

            Serve: Once the eggs are cooked to your liking, remove the skillet from heat. Garnish with fresh herbs, if using, and serve immediately.
