2 large sweet potatoes, peeled and diced into 1/2-inch cubes

1 cup hatch green chilies, diced (fresh or roasted)

1 red bell pepper, diced

1 small red onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

4 large eggs (optional for serving)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Instructions
 

Prepare the Sweet Potatoes: In a medium pot, bring water to a boil. Add diced sweet potatoes and cook for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the chopped red onion and red bell pepper. Sauté for about 3-4 minutes until they start to soften.

      Add Garlic and Spices: Stir in the minced garlic, ground cumin, smoked paprika, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.

        Combine with Sweet Potatoes and Chilies: Add the partially cooked sweet potatoes and diced hatch chilies to the skillet. Toss everything together and let it cook for about 10-12 minutes, stirring occasionally. If needed, add a splash of water to help with cooking.

          Finish Cooking the Hash: Continue to cook until the sweet potatoes are fully cooked and they start to crisp up at the edges. This should take an additional 5-7 minutes.
