1 medium sweet potato (about 1 cup, cooked and mashed)

1/2 cup brown sugar

1/4 cup granulated sugar

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup raisins or chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large mixing bowl, combine the mashed sweet potato, brown sugar, granulated sugar, and vegetable oil. Mix until smooth.

      Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

        In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

          Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.

            If using, fold in the chopped walnuts and raisins or chocolate chips until evenly distributed.

              Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

                Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.

                  Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
