Sweet Potato Nachos with Lime Crema

Ingredients
  

2 large sweet potatoes, sliced into thin rounds

1 tablespoon olive oil

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn (frozen or fresh)

1 cup cherry tomatoes, halved

1 jalapeño, sliced (optional)

1 cup shredded cheese (cheddar or a vegan alternative)

Fresh cilantro, for garnish

For the Lime Crema:

1/2 cup sour cream or Greek yogurt (or a dairy-free alternative)

2 tablespoons fresh lime juice

Zest of 1 lime

1 tablespoon honey or agave syrup

Salt, to taste

Instructions
 

Prepare the Sweet Potatoes:

    Preheat your oven to 425°F (220°C). In a large bowl, toss the sliced sweet potatoes with olive oil, paprika, cumin, garlic powder, salt, and pepper until evenly coated.

      Bake the Sweet Potatoes:

        Arrange the sweet potato rounds in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway through, until they are crispy and golden brown.

          Make the Lime Crema:

            In a small bowl, combine sour cream (or yogurt), lime juice, lime zest, honey (or agave), and a pinch of salt. Mix well until smooth and set aside.

              Assemble the Nachos:

                Once the sweet potatoes are done, remove them from the oven and layer them on a large serving platter. Top with black beans, corn, cherry tomatoes, jalapeño slices, and shredded cheese.

                  Melt the Cheese:

                    Return the assembled nachos to the oven and bake for an additional 5-7 minutes, or until the cheese melts and begins to bubble.

                      Serve:

                        Remove from the oven and garnish with fresh cilantro. Drizzle with lime crema before serving.
