1 cup pumpkin puree

1/2 cup Greek yogurt

1/4 cup maple syrup

1/2 teaspoon vanilla extract

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ginger

1/4 teaspoon salt

1 cup rolled oats

1/2 cup chopped walnuts or pecans (optional)

1/4 cup dried cranberries or raisins (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). If using muffin tins, grease them with cooking spray or line with muffin liners for easier removal.

    Combine Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, Greek yogurt, maple syrup, and vanilla extract. Mix until smooth and creamy.

      Mix Dry Ingredients: In another bowl, whisk together the rolled oats, cinnamon, nutmeg, ginger, and salt. Fold in the chopped walnuts or pecans and dried cranberries or raisins if using, ensuring the dry ingredients are well combined.

        Combine Mixtures: Gradually stir the dry oat mixture into the pumpkin mixture until everything is evenly combined. The mixture should be slightly thick but pourable.

          Fill the Muffin Tins: Distribute the mixture evenly into the prepared muffin tins, filling each cup about 3/4 full to allow room for rising during baking.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the edges start to turn golden brown, and a toothpick inserted in the center comes out clean.

              Cool: Remove the breakfast cups from the oven and let them cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely.
