Sweet & Spicy Pineapple BBQ Meatballs

For the Meatballs:

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (preferably panko for added crunch)

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

2 tablespoons soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon smoked paprika

1 teaspoon cumin

1 tablespoon minced fresh parsley (optional)

For the Sweet & Spicy Pineapple BBQ Sauce:

1 cup pineapple juice

1/2 cup BBQ sauce (your favorite variety)

1/4 cup honey

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional for extra heat)

1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make the Meatballs: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, soy sauce, Worcestershire sauce, black pepper, salt, smoked paprika, cumin, and parsley. Mix until just combined (don't overmix).

      Shape Meatballs: Roll the mixture into meatballs about 1-inch in diameter and place them on the prepared baking sheet.

        Bake the Meatballs: Bake in the preheated oven for 20-25 minutes, or until cooked through and browned.

          Prepare the Sauce: While the meatballs are baking, combine the pineapple juice, BBQ sauce, honey, sriracha, garlic powder, and red pepper flakes in a saucepan over medium heat. Bring to a simmer.

            Thicken the Sauce: Once the sauce begins to simmer, add the cornstarch-water mixture to the pot. Stir continuously until the sauce thickens, about 2-3 minutes. Remove from heat.

              Coat the Meatballs: Once the meatballs are done baking, remove them from the oven and transfer them to a large bowl. Pour the sweet & spicy pineapple BBQ sauce over the meatballs and toss gently to coat.

                Serve: Serve the meatballs warm, garnished with sliced green onions or additional parsley if desired. These meatballs are perfect on their own or served with rice, noodles, or as a party appetizer with toothpicks.
