Ingredients
  

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup (adjust to taste)

1 cup almond milk (or any milk of your choice)

1/4 cup chia seeds

1 teaspoon vanilla extract

A pinch of sea salt

1/2 teaspoon lemon juice

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium bowl, combine the sliced strawberries and 1 tablespoon of honey or maple syrup. Toss gently to coat and set aside to macerate for about 10-15 minutes while you prepare the chia mixture.

    In another bowl, mix the almond milk, chia seeds, vanilla extract, sea salt, and lemon juice. Whisk well until the chia seeds are evenly distributed. If using, add another tablespoon of honey or maple syrup for additional sweetness.

      Let the chia mixture sit for about 5 minutes, then whisk again to break up any clumps that may have formed. Allow it to sit for another 10-15 minutes until it thickens to a pudding-like consistency.

        Once thickened, take a glass or cup and layer a few spoonfuls of the chia mixture at the bottom.

          Next, add a layer of the macerated strawberries on top. Repeat the process, alternating between chia mixture and strawberries until you reach the top of the cup.

            Finish with a final layer of strawberries and a sprig of fresh mint for garnish.

              Chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
