2 pounds boneless, skinless chicken breasts

1 cup chicken broth

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon brown sugar

1 tablespoon smoked paprika

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

½ cup barbecue sauce (plus extra for serving)

1 tablespoon apple cider vinegar

Buns or tortillas, for serving

Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions
 

Prepare the Chicken: Begin by patting the chicken breasts dry with paper towels and seasoning them with salt and pepper on both sides.

    Sauté Aromatics: In your pressure cooker, using the sauté function, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and continue cooking for another minute until fragrant.

      Mix the Spice Blend: In a small bowl, mix together the brown sugar, smoked paprika, chili powder, ground cumin, salt, and black pepper. Sprinkle the spice mix evenly over the chicken breasts, ensuring they are well coated.

        Add Ingredients to Cooker: Pour the chicken broth, apple cider vinegar, and barbecue sauce into the pressure cooker. Gently place the seasoned chicken breasts into the liquid, ensuring they are mostly submerged.

          Pressure Cook: Close the pressure cooker lid and set the vent to sealing. Cook on high pressure for 10 minutes. Once the cooking time is complete, allow for a natural pressure release for about 10 minutes, then perform a quick release to let out any remaining steam.

            Shred the Chicken: Carefully remove the chicken from the pot and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.

              Combine with Sauce: Return the shredded chicken back to the pressure cooker and stir it into the broth and barbecue sauce mixture. Let it sit on the warm setting for a few minutes to absorb the flavors.

                Serve: Serve the pulled chicken on buns or tortillas, topped with your choice of coleslaw, pickles, and jalapeños. Drizzle with additional barbecue sauce if desired.
