For the Meatballs:

1 lb ground pork (or beef/chicken)

1/2 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh cilantro (or parsley)

1 large egg

2 cloves garlic, minced

1 tsp ginger, grated

1 tsp salt

1/2 tsp black pepper

1 tsp onion powder

For the Honey Sriracha Sauce:

1/2 cup honey

1/4 cup sriracha (adjust based on heat preference)

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tbsp cornstarch (optional, for thickness)

1-2 tbsp water (if needed to thin)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan, cilantro, egg, garlic, ginger, salt, black pepper, and onion powder. Mix until just combined – avoid overmixing to keep the meatballs tender.

      Form the Meatballs: Using your hands, shape the mixture into meatballs about 1 inch in diameter and place them on the prepared baking sheet. You should get approximately 20 meatballs.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are golden brown and cooked through.

          Make the Honey Sriracha Sauce: While the meatballs are baking, prepare the sauce in a small saucepan. Combine honey, sriracha, soy sauce, rice vinegar, and sesame oil. If you want a thicker sauce, mix cornstarch with a splash of water and add it to the saucepan. Heat over medium-low, stirring constantly until the sauce is well-blended and slightly thickens, about 5-7 minutes. If it gets too thick, add a bit more water to reach the desired consistency.

            Coat the Meatballs: Once the meatballs are done baking, remove them from the oven and pour the warm honey sriracha sauce over them. Gently toss until the meatballs are fully coated.

              Serve: Transfer the sauced meatballs to a serving platter, and garnish with additional chopped cilantro or sesame seeds if desired. These meatballs are perfect as an appetizer, served over rice, or tucked into sliders!
