Tender Maple Dijon Pork Bites

1 lb pork tenderloin, cut into bite-sized pieces

1/4 cup Dijon mustard

1/4 cup pure maple syrup

2 tbsp soy sauce

2 garlic cloves, minced

1/2 tsp black pepper

1/2 tsp salt

2 tbsp olive oil

1/2 tsp red pepper flakes (optional, for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Pork: In a bowl, combine the Dijon mustard, maple syrup, soy sauce, minced garlic, black pepper, salt, and red pepper flakes (if using). Mix well. Add the pork pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes to 1 hour, or overnight for more flavor.

    Prepare the Skewers: If you are using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat your grill or stovetop grill pan over medium-high heat.

      Cook the Pork Bites: Remove the pork from the marinade, shaking off any excess. Add olive oil to the grill or grill pan. Thread the pork pieces onto the skewers, leaving a little space between each piece for even cooking.

        Grill the Skewers: Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the pork is cooked through and has nice grill marks. The internal temperature should reach 145°F (63°C).
