Ingredients
  

For the Meatballs:

1 lb ground chicken

1/4 cup fresh cilantro, chopped

1/4 cup green onions, finely chopped

1/4 cup breadcrumbs

2 cloves garlic, minced

1 inch piece ginger, grated

1 tablespoon fish sauce

1 tablespoon lime juice

1 tablespoon red curry paste

1 egg, lightly beaten

Salt and pepper to taste

For the Curry Sauce:

1 tablespoon vegetable oil

1 onion, finely chopped

1 can (400 ml) coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce

1 tablespoon brown sugar

Juice of 1 lime

Fresh basil and cilantro for garnish

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground chicken, cilantro, green onions, breadcrumbs, garlic, ginger, fish sauce, lime juice, red curry paste, egg, salt, and pepper. Mix until thoroughly combined.

      - Form the mixture into small meatballs, about 1-inch in diameter, and set aside.

        Cook the Meatballs:

          - Heat a large skillet over medium heat and add a splash of oil. Cook the meatballs in batches until golden brown on the outside and cooked through, about 6-8 minutes. Remove them from the skillet and set aside.

            Make the Curry Sauce:

              - In the same skillet, add a tablespoon of vegetable oil. Sauté the onion until translucent, about 3-4 minutes.

                - Stir in the red curry paste, cooking for another minute until fragrant.

                  - Pour in the coconut milk, stirring well to combine the curry paste with the milk. Add fish sauce, brown sugar, and lime juice, stirring until the sauce is smooth and well-integrated.

                    Combine:

                      - Gently return the cooked meatballs to the skillet with the curry sauce. Let them simmer in the sauce for about 5-10 minutes, allowing them to absorb the flavors.

                        Serve:

                          - Serve the meatballs hot, garnished with fresh basil and cilantro, alongside jasmine rice or noodles to soak up the delicious curry sauce.
