1 lb (450g) boneless, skinless chicken thighs, diced

2 tablespoons vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, finely diced

1 carrot, grated

1 green onion, chopped

1 cup shredded red cabbage

2 tablespoons soy sauce (or tamari for gluten-free option)

1 tablespoon fish sauce (optional)

1 tablespoon lime juice

1 teaspoon brown sugar or honey

Salt and pepper to taste

For the Peanut Sauce:

1/4 cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 teaspoon sriracha (adjust for heat preference)

2-3 tablespoons warm water (to thin the sauce)

For Serving:

1 head of butter lettuce or romaine, leaves separated

Fresh cilantro leaves, for garnish

Chopped peanuts, for garnish

Lime wedges, for garnish

Prepare the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sriracha, and warm water until smooth. Adjust the consistency with more water if needed. Set aside.

    Cook the Chicken Filling: In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and grated ginger and sauté for about 1 minute, until fragrant.
