Ingredients

3 large ripe bananas, mashed

1/3 cup melted unsalted butter

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 teaspoon ground cinnamon (optional, for added flavor)

1 1/2 cups all-purpose flour

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

Mix the wet ingredients: In a large mixing bowl, combine the mashed bananas and melted butter. Stir in the granulated sugar, brown sugar, beaten egg, and vanilla extract until everything is well incorporated.

Add dry ingredients: Sprinkle the baking soda and salt over the mixture and mix in. If you're using cinnamon, add it here. Gently fold in the flour until just combined—be careful not to overmix, as this can lead to tougher muffins.

Incorporate chocolate and nuts: Gently fold in the chocolate chips and, if using, the chopped nuts. Ensure they are evenly distributed throughout the batter.

Fill the muffin tins: Use a spoon or ice cream scoop to fill each muffin cup about 3/4 full with the batter.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with just a few crumbs attached.

Cool and serve: Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely. Enjoy your muffins warm or at room temperature!
