Ingredients

8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup heavy cream

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and freshly ground black pepper to taste

1/2 cup panko breadcrumbs (optional for topping)

2 tablespoons olive oil (optional for topping)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Roux: In a large saucepan over medium heat, melt the butter. Add the flour and whisk constantly for about 1-2 minutes until it turns a light golden color.

Add Dairy: Gradually whisk in the whole milk and heavy cream. Continue whisking until the mixture is smooth and begins to thicken, around 4-5 minutes.

Cheesy Goodness: Remove the saucepan from heat and stir in the cheddar and Gruyère cheeses until melted and creamy. Add the Dijon mustard, garlic powder, onion powder, salt, and pepper. Adjust seasoning to taste.

Combine: Add the cooked macaroni to the cheese sauce. Stir until the pasta is evenly coated.

Optional Topping: If you like a crunchy top, preheat your oven to 350°F (175°C). In a small bowl, mix the panko breadcrumbs with olive oil. Sprinkle the mixture on top of the mac and cheese in a greased baking dish. Bake for about 15-20 minutes until the top is golden brown and crispy.

Serve: Remove from the oven, garnish with fresh parsley, and serve hot. Enjoy your rich and creamy mac & cheese!
