2 large eggs

1 cup buttermilk (or homemade buttermilk: 1 cup milk + 1 tbsp lemon juice)

Zest of 1 large lemon

1 tsp vanilla extract

1 ½ cups fresh blueberries (can substitute frozen, but thaw and drain)

Optional: 2 tbsp coarse sugar for topping
