1 cup (2 sticks) unsalted butter, softened

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 ¼ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 cup chocolate chips (semi-sweet or milk chocolate)

1 cup mini marshmallows

1 cup graham cracker crumbs (plus extra for topping)

½ cup chocolate squares or bars (for layering on top)

Preheat Your Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easier removal later.

    Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until the mixture is light and fluffy. This should take about 2-3 minutes.

      Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until fully combined. Avoid overmixing.

          Fold in Graham Cracker Crumbs and Chocolate Chips: Gently fold in the graham cracker crumbs and chocolate chips into the dough until evenly distributed.

            Layer the Dough: Spread half of the cookie dough evenly in the bottom of the prepared baking pan, pressing it down firmly.

              Add Marshmallows and Chocolate: Sprinkle the mini marshmallows evenly over the layer of dough. Then, place the chocolate squares or bars on top of the marshmallows, ensuring coverage.

                Top with Remaining Dough: Take the remaining half of the cookie dough and drop spoonfuls over the marshmallow and chocolate layer. It doesn’t need to be completely covered; some gaps are okay as it will expand while baking.

                  Sprinkle More Graham Cracker Crumbs: For a finishing touch, sprinkle a little extra graham cracker crumbs on top of the cookie bars.

                    Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean.

                      Cool and Cut: Allow the bars to cool in the pan for at least 15 minutes before cutting them into squares. For best results, let them cool completely before slicing.
