Ingredients

12 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons Cajun seasoning

2 tablespoons olive oil

1 tablespoon unsalted butter

4 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 tablespoon Dijon mustard

Salt and pepper, to taste

¼ cup fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Season the Shrimp: In a medium bowl, toss the shrimp with Cajun seasoning, ensuring they are thoroughly coated.

Sauté the Shrimp: In a large skillet over medium heat, add the olive oil and butter. Once melted and hot, add the seasoned shrimp. Sauté for about 2-3 minutes per side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the Sauce: In the same skillet, add the minced garlic, chopped onion, and diced red bell pepper. Sauté for about 3-4 minutes until the onion becomes translucent and the bell pepper softens.

Create a Creamy Base: Stir in the heavy cream, chicken broth, and Dijon mustard. Bring the mixture to a gentle simmer, letting it reduce for about 3-5 minutes.

Add Cheese: Gradually mix in the grated Parmesan cheese, stirring continuously until the cheese is fully melted and the sauce becomes creamy. If the sauce is too thick, adjust it with a bit of the reserved pasta water.

Combine: Add the shrimp back into the skillet, along with the drained pasta. Toss everything together, making sure the pasta is well coated in the creamy Cajun sauce. Season with salt and pepper to taste.

Garnish and Serve: Remove from heat and garnish with fresh parsley. Serve with lemon wedges on the side for a zesty kick!
